HAPPY THANKSGIVING
~ Sweet Potato Pie ~
I love Sweet Potato Pie.
And everyone who tastes it says it is awesome!
I just baked these pies to bring to my friend's Thanksgiving Dinner.
The whole apartment smells like a home and so festive!
It is good to serve in room temperature or warm,
with ice cream or some marshmallow or whip cream.
1 1/2 cup of mashed sweet potato
1/2 cup sugar
2 tsp of honey
2 eggs
1 tsp cinnamon
1/2 tsp ground ginger
1 tsp flour 1/2 cup of evaporated milk
1/2 tsp of salt
1 Pillsbury pie crust ( prepared as per instructions given)Mix sugar, salt, cinnamon, ginger and flour in small bowl. Beat eggs in large bowl. Stir in mashed sweet potato and sugar-spice mixture. Gradually stir in evaporated milk and honey.
Pour the mixtures into pie shell.
Placed the sliced sweet potato in any patterns you like. Stick a few cloves on the top and bake in preheated oven 425F for 20 mins. Reduce temperature to 350F, bake 40-50 mins or until knife inserted near center comes out clean.
